I wanted to try my hand at doing a weekend recipe tutorial. Here we go!Portabella Mushroom Sandwich
It’s basically a glorified grilled cheese sandwich, but I always feel sophisticated when eating this dish. The richness and meatyness of the Portabella mushroom makes this sandwich delicious and filling. I always refer to the Portabella as the steak of all mushrooms. haha.

Heat olive oil and wine in a frying pan big enough to accommodate your mushroom.
Slice mushroom and place in frying pan. Saute over medium to low heat. Add more wine and oil if too much cooks off. Sprinkle with garlic powder.
Continue sauteing until mushrooms have cooked down to about half their original size. Use a fork to remove mushrooms from pan and set aside. Pour out the excess saute mixture (a little in the pan is necessary for next step).
Turn pan to the lowest setting. Spread a small amount of butter on one side of a slice of sourdough bread. Place butter-side-down in pan and cover with swiss cheese.
Top swiss cheese with mushrooms and pour the small amount of juice over the sandwich. This will soak into the bread a little bit and the flavor will soak in as well.
Top with more swiss cheese and place other slice of sourdough, butter-side-up, on top.
Make sure the pan is still on the lowest setting and cover with a lid to melt the cheese (about 3-4 minutes).
Once cheese is melted, uncover, and turn on medium-high to make sure the bread gets crunchy. Flip sandwich until both sides reach a golden brown color.
Slice in half and enjoy!
