Recipe: Pumpkin Bread

This recipe is FANTASTIC!
Makes 1 loaf or 12 muffins

1 2/3 cup whole wheat or all-purpose flour
1 cup white sugar
1/4 cup brown sugar
1 tsp baking soda
2 tsp ground cinnamon
3/4 tsp salt
1/2 tsp baking powder
1/2 tsp ground nutmeg
1/2 tsp ground cloves
2 eggs
1 cup canned pumpkin
1/2 cup unsweetened applesauce
1/2 cup water

NOTE: Additional mixture of sugar, cinnamon, and cloves (amounts to your liking) can be sprinkled on top of the loaf or muffins before baking – I love doing this.

In a large bowl, combine flour, sugar, baking soda, cinnamon, salt, baking powder, nutmeg, and cloves.
In another bowl, wisk eggs, pumpkin, applesauce, and water. Slowly add wet ingredients to dry until moistened.
For loaf, pour into a greased loaf pan (will be VERY full) and bake at 350 degrees for 65-70 minutes, or until a toothpick comes out clean.
For muffins, pour into greased muffin pan (full), and bake at 350 for 25 minutes, or until a toothpick comes out clean.
Cool in pan for 10 minutes before removing to a wire rack.
